Ravishing Roast Radish Bruschetta’s

Do you have bread that looks a little "tired"? Do you love quick and easy snacks? These pretty and delicious little bruschetta's are a real hit! Potassium Packed Radishes are incredibly great for fighting inflammation and blood purifying. The spicy aftertaste of the radish is beautifully complimented with the mustard. Go on, give it a bash!


Ingredients
 150 g Radishes
 200 g Cherry Tomatoes
 500 g Ciabatta (Wood Fired, Stone Ground)
 Whole Grain Dijon mustard
 Himalayan Salt
 Pepper
 Mixed Herbs (Parsley, Basil, Rocket)
 1 tbsp Crushed Garlic

Preparation Method

Preheat the oven to 180'C.

Slice the radishes into quarters. Mix the radishes and whole tomatoes in the olive oil, seasoning and garlic.

Roast for 30 minutes in the oven.

Whilst the Radish and Tomatoes roast, cut the bread into slices and brush them with olive oil and toast lightly.

Once the Radish and Tomatoes are roasted, smoosh the toasts with a generous helping of mustard and top with the roasted goodies and voila!
