Green Pepper (medium each)
Peppers have a lot going for them. They’re low in calories and are chock-full of good nutrition. An excellent source of vitamins A and C, potassium, folic acid, and fibre. Because these low-calorie, nutrient-dense veggies have a low-impact on blood sugar, they are excellent for anyone wanting a low-sugar diet.
Green bell peppers are best eaten raw with your favourite dressing (for us it is a French dressing – garlic, mustard, olive oil, vinegar, salt & pepper), or dipped in hummus for a nutritious and tasty side dish or snack. Add chopped bell peppers to make the best veggie lasagna. Green peppers complement the taste of chilli and are a fabulous addition to any salad!
