The Rosa Bianca Brinjal is one of the most popular eggplant varieties. It is a favourite among chefs and gourmet home cooks, coveted for not only its beauty but the delicate flavour without the bitterness.

Eggplants, also known as Brinjal or Aubergines, belong to the nightshade family of plants and are technically a fruit, as they grow from a flowering plant and contain seeds. All eggplants are a nutrient-dense food, meaning they contain a good amount of vitamins, minerals and fibre with very few calories. They are high in antioxidants, and especially high in anthocyanins, a pigment with antioxidant properties that can protect against cellular damage.

Cooking
Our Gardener’s wife likes to fry them sliced with some olive oil or pressed in a sandwich maker. Add seasoning after. They are also delicious stuffed, roasted or used in curries and stews like Baba Ghanoush. They are also great as a substitute for lasagna sheets when making your favourite Italian dish.
