Butternut Squash 1kg (small to medium)
Butternut Squash is a beautiful orange-hued squash with a creamy, nutty flavour and it packs some impressive health benefits. The bright orange flesh makes it lavish in the anti-oxidant beta-carotene. Even though it has a lovely sweet palate, it is low fat, cholesterol free, low in sodium, an excellent source of fiber, as well as vitamins A and C.
This is a hugely versatile veg to cook. It can be steamed, boiled (soups), roasted (julienned, stir-fried), fried in a little butter… Our favourite way to make this a hero dish is simple and delicious! Fry an onion with a bit of garlic and freshly chopped herbs of your choice, you can add mushrooms and the fleshy part that you scooped from the pumpkin to create a larger area to fill. Add a cup of rice (we like brown basmati), add your liquid as per rice instructions and season with salt and pepper. When the rice is almost cooked but still crunchy, spoon the rice into the pumpkin halves, cover your dish with foil, and bake for 30-40 minutes at 180 degrees Celsius. We’ve found that the skin cooks so soft and is lovely to eat too. Enjoy!
