Healthy Veggie Skewers
These veggie skewers are packed with goodness and are so easy to make. Simple slice your selection of veggies from your latest Cape Food Farm delivery, stick them on a skewer (the thinner skewers work best), add a marinade. The key is to slice the veggies that take longer to cook thinner than the ones that cook quicker. We used a simple marinade made from olive oil, lemon juice, fresh basil, garlic, salt and pepper. Grill them in the oven for around 15 minutes, or straight on the braai for about the same.
The veg we used in our skewers were Patty Pans, Baby Marrow, Spring Onion, Carrots, Green Bean, Radishes.
